A study to understand the level of production for Sweetpotato roots and vines, determine whether farmers have surplus production of roots and vines, document current markets, challenges faced by traders and how they are handled, understand how bakeries can utilize sweetpotato puree as a replacement for cereal-based ingredients and how utilization of OFSP can be increased in Eastern, Central and Western Uganda.
